Sugar Cookies/Icing

Sugar Cookies – Makes 25

1 cup Butter, unsalted
1 cup Wh. Sugar, granulated
1 Egg
1 tsp Vanilla Extract
1/2 tsp Almond Extract
2 tsp Baking Powder
3 cups Flour

• Preheat oven to 350 C
• With an electric mixer, beat together butter, and sugar, until creamy.
(Approx. 3 minutes)
• Add in Almond Extract, Vanilla Extract, and Egg. Mix together.
• Add in Baking powder, then gradually mix the flour into the dough.
Mix until unable with the electric mixer, but when/if you find your dough is too stiff for the electric mixer, take it out, sprinkle some flour on the counter top, and knead the rest of the flour in. (Also if dough starts getting sticky, add more flour to your counter top while kneading.)
• When done kneading the dough, flour your counter top, and roll the dough out. Use cookies cutters of any shape(s). SEE NOTES.
• Place on cookie sheet, and put in oven, cook for 8-10 minutes, or until light golden brown, can be seen on the sides of the cookies. (For softer cookies, bake for 6-8 minutes)
• When the cookies are done, take them out of the oven, and let cool on cookie sheet. (If you remove them while hot, they will break.) Approx. 2-5 minutes. Remove cookies from sheet and put on flat surface. (Or cooling racks.)

– I found the cookies stuck to my counter and was hard to peel off without wrecking them, if I didn’t use enough flour, before I rolled them out.

– I like them a bit crispier, which is why I said 8-10 minutes.

Thought we would try a sugar cookie recipe, this holiday weekend, as a nice treat. Though we didn’t put sugar on as a topping, instead, we made some ‘Royal Icing‘ and spread it on the cookies like, butter on toast.

My partner, and another taster both said the sugar cookies tasted, how sugar cookies were suppose to taste, but I thought the cookies tasted a bit bland, luckily with the sweet icing, it brought the cookie together, so, here is the Icing recipe.

Royal Icing

2 tbsp Meringue Powder
1/4 cup Water
1 tsp Vanilla Extract
4 cups Powdered (Icing) Sugar

• Combine Meringue Powder, and water in a bowl. Mix together with spoon until slightly foamy.
• Add in Vanilla Extract and Icing Sugar. Mix all together, until light and airy.
(If you find the Icing to thick, use 1 tsp of water at a time, mixing it in each time, until the consistency you like.)
• Spread Icing on cookies.
(The Icing is white. If you want colored Icing, separate into bowls, and add food coloring, to the icing, then spread on cookies.) We used butter knives to spread the Icing.
• Eat/Enjoy.

– The Icing was really easy to make, and tasted exactly how I thought it would. (Remembering taste from cooking class days).

-Makes enough Icing for all the cookies (With some to spare.)

Super easy Icing to make, for a great sweetness to any cookie. Enjoy these cookies any time of the year, with any cookie cutters you have. Great for all occasions.
