5 cups Macaroni
1/2 Bushel Radishes
3 Celery Sticks
1 Bushel Green Onions
1 pk Imitation Crab (opt.)
2 cups Mayonnaise
• Cook Macaroni as directed on the package. Drain, Place to the side, let cool to room temperature.
• Finely chop the Celery Sticks, Radishes, Green Onions, and Imitation Crab. (Opt.) SEE NOTES.
• In the macaroni, (in the large bowl or container). Add 1 & 1/2 cups Mayonnaise, Finely chopped Radishes, Celery, Green Onions, and the Imitation Crab (Opt.). Stir until everything is mixed evenly.
• Place in fridge and let cool. SEE NOTES.
• Salt & Pepper.
MenuDuet’s Notes: In the picture displayed;
-When doing the Radishes, cut them into circles the width of slivers, then cut those circles into fours.
-Use the other 1/2 of the Mayonnaise later on before serving, because most will be absorbed while it cools in the fridge.
-We use Miracle Whip.
Alright we will admit it, after the Potato Salad, we had a hankering for another one of my mom’s specials.
(Luckily for us, the ingredients are close, so we had leftover vegetables to use.)
Macaroni Salad, this dish is just absolutely amazing! If I had to choose between the two Salad recipes, this Macaroni Salad is tops for us. (A container full doesn’t last 24 hours in this house).
The Imitation Crab is optional because sometimes she would put it in, and sometimes she wouldn’t. We’ve never tried before, but you can use real crab as well.
