Baked Penne Pasta
Inspiration: The Cookie Rookie

3 lg Chicken Breasts
1/2 cup Italian dressing
1 Bag Penne Pasta
2 Jars @ 640ml Classico Pasta Sauce
1 cup Mozzarella cheese
1 & 1/2 cup Parmesan Cheese, rated
Seasonings: (1-2 tbsp) Oregano, Salt and Pepper. (Opt. Seasonings; Onion Powder, Garlic Powder, Italian Seasonings, Basil or Parsley.)

• Thaw your Chicken Breasts out, cut them into cubes. (Approx 1 1/2″-2″). In a frying pan, add in your chicken cubes, and pour the Italian Dressing over top, with some salt and pepper. (You can also add other seasonings if you’d like, such as; Onion Powder, Garlic Powder, Italian Seasonings). Mix everything on the chicken cubes together slightly, then fully cook the chicken cubes on a high heat until no pink in the middle, and they are browned.
• In a large cooking pot, combine (3/4ths of the cooking pot full) water, (1/2 tsp) salt and (1 tbsp) butter, when the water is boiling, Cook Pasta as directed on package, but instead of cooking it fully, pull the pasta out when it becomes a bit soft and flexible. (Approx 5 minutes into boiling). Strain the water out of the pasta when it is done.
• In a 9″ x 13″ glass dish, mix together the Chicken, Pasta, Pasta Sauce, (1 cup) Parmesan Cheese, and Oregano. Lightly flatten the pasta down after you are done mixing it.
• Preheat oven to 350 C
• Spread the Mozzarella Cheese and (1/2 cup) Parmesan Cheese on top of the pasta evenly. (Opt. Sprinkle Basil or Parsley on top as garnish.)
•Cook in oven for 5-10 minutes, or until cheese is melted. (Cheese may be slightly brown around edges). Take out of oven, and let stand for 5 minutes.
• Serve/Enjoy.

MenuDuet’s Notes: In the picture displayed;

-For the Pasta Sauces we used; ‘Classico Fire Roasted Tomato and Garlic’ and ‘Classico Roasted Garlic and Onion’.

-You can use more Italian Dressing, if it disappears before your chicken is cooked, we ended up using more, and there wasn’t a big taste difference.

-Use any Pasta Sauce you like.

-Partner suggested using some Italian Sausage Next time, and I agree it would be yummy, so keep that in mind if you make this.

Looking through Pinterest, one of my places I like to look for new and yummy recipes, I saw one that we wanted to try. Though when it came to actually following the recipe, we sort of strayed, and ended up with this instead.

A yummy Baked Pasta dish, with chicken and cheese, what could be better? (Actually I’m looking forward to making it again with the Italian Sausages, because I feel we missed out somehow… more I think about it, the more I want to try it!) This dish is exactly what you’d expect.. deliciousness!
Great as leftover the next day. (We sprinkled some extra Parmesan Cheese on it before popping it into the microwave). Definitely a big dish, so have some people over, or expect some left overs. (Which lets face it, is never a bad thing.)
